Hamburg. Nutrition expert Dr. Riedl warns against “consumer deception” and “sick-making” foods. This system is intended to help with shopping.
In the supermarket, there are meter-long shelves with lots of colorful packaging. There you can find a wide variety of processed and highly processed foods. Dr. Matthias Riedl even speaks of a “nutritional hostile environment”. “So it’s no wonder we get sick.” But what exactly are highly processed foods?
The beginning was made after the Second World War, when there was a food problem, says the Nutrition Doc in the podcast “Dr. Matthias Riedl. This is how healthy eating works.” “The food industry sat down and said, we are now making standardized, reliable quality food. That was the birth of Kellog’s flakes. They processed what was available in large quantities, wheat products in every imaginable form. And even today, the food industry looks at the world market to see where I can get cheap fat, where I can get cheap carbohydrates, and then use them to make a visually and sensorially good-looking food.”
Nutrition Doc: Highly processed foods are harmful to our health
That is the intention – the Ingredients should be as cheap as possible: “Sugar, for example, is expensive, sweetener is much cheaper. If I want to add a garlic flavor, then I only pay a fraction of the price for a garlic flavor. And the more I start tinkering with food, extracting a bit of protein, adding a bit of fat, there is cheap palm fat, so I add palm fat.”
Added to this are colourings, emulsifiers, flavourings and stabilisers. This mixture is considered to be highly processed food.
Nutrition doctor Matthias Riedl calls the products “pseudo-foods”
In the end, you have a Pseudo-foodsas he calls it, that looks like food and tastes like food, “but it doesn’t nourish us, it’s empty. If I eat a lot of empty foods, what happens then? I’m displacing foods that are rich in content, like ancient vegetables, real food.”
The problem is the Crowd. The average German citizen eats 50 percent highly processed products, young people eat 60 percent, and in America it is already 75 percent of young people, and the trend is rising. “We are talking about significant quantities here, and that is why it is now politically explosive, because if at least half of the population eats this kind of junk, then that has consequences.” Highly processed foods contain little protein and fiber because they are expensive, says Riedl, and then you don’t feel full enough. And then you eat too much of the unhealthy convenience foods.
Foods are divided into so-called Nova classes
The classification of food into so-called Nova Classes is intended to help consumers. “Classes one, two and three are the less harmful, lightly processed classes; only from a highly processed class upwards is it considered highly processed,” explains Riedl.

Belong to Nova Class One fruit and vegetablesmeat, fish, eggs or milk. When foods are fermented, they belong to a higher class, but are still healthy. Nova class two includes foods that are mainly used as ingredients, such as oil, butter, honey, sugar and salt.
Nova class three are foods that have been Cook or baking of foods from Nova levels 1 and 2 and consisting of three to four ingredients. These include baked bread and rolls, matured cheese, and canned vegetables, fruit, and fish.

Riedl: Look closely at the ingredients list, even for organic products

The nutritionist says: “Flavor enhancers, artificial flavors, trigger such a supernatural reaction in us humans. Eating cues out of, that we have no choice but to reach into the bag again.” Politicians always blame the fat person, the person who has eaten the wrong food. “No, we all have our problems with it. And one person gets fat, and another gets very fat, and another gets sick, and another is more likely to die from it.” The “nutritional environment” is to blame for this.

Riedl gives tips on how to replace unhealthy stuff
Nevertheless, PossibilitiesRiedl says that you have to actively try to quit and not have unhealthy stuff in the house. Instead of sweets, you should reach for crunchy vegetables, or if you haven’t eaten enough protein, a piece of cheese, then the desire for sweets will disappear. “Or I always have a variety of nuts on hand for emergencies,” says the nutritionist.
One must be aware: “Most sweets are Nuva class four. That’s not good for us, it makes us sick, makes us live shorter lives and makes us less fit. You just have to be clear about that.”
Espresso chocolate smoothie recipe
For 2 people, 5 min. preparation, nutritional value per portion: approx. 410 kcal | 6 g protein | 31 g fat | 27 g carbohydrates
Ingredients: 1 small banana, 200 ml coconut milk (from a can), 200 ml coconut water (from a tetra pack), 2 tsp cocoa powder, 20 g fine oat flakes, 1 tbsp dark almond butter, 100 ml espresso, 4 ice cubes
Preparation:
1. Peel the banana and cut it into large pieces. Put the banana and the remaining ingredients – except the ice cubes – into the blender and puree everything until foamy for about two minutes.
2. To serve, pour the smoothie into glasses and add the ice cubes. It tastes best when well chilled!
